Update to Pinkie for Pink

Happy Monday everyone! I hope your weekend was well. As for me things have been pretty hectic around our house, hence my absence here on the blog. I spent the last few weeks working a LOT on new items for my Etsy shop. From new party hats to adorable flower headbands and even some fun party printables

My new venture that I am currently working on is my son's 2nd birthday party!! I am so excited to be working on a party again and I have a lot planned so my head will be deep in this project for a few weeks. I have a few things coming up along the way but I just won't be around as often.

Spinach and Parmesan Orzo Pasta


Today I am sharing with you another one of my favorite dinners that we have had lately. This Spinach and Parmesan Orzo Pasta is a delicious dish that even my husband and children loved! Give it a try and enjoy!

Ingredients 
4 tablespoons butter divided
1 box Orzo pasta
4 cups water
1/2 cup chicken broth
1 tsp minced garlic
1 (10oz) bag of baby spinach chopped
1/2 grated Parmesan cheese
Salt and Pepper to taste

Directions
Melt 2 Tbsp butter in a large pot over medium heat
Add the Orzo pasta and stir until browned
Stir in water and chicken broth and bring to a boil
Cover, reduce heat and simmer until noodles are tender and liquid is absorbed


Meanwhile chop the spinach and melt the remaining 2 Tbsp butter in a skillet on medium-high heat. 



Add the minced garlic and saute for a few seconds then add the spinach and saute until wilted and done


Once the Orzo is cooked add the spinach, Parmesan cheese and salt and pepper to the pot.

Skillet Lasagna


Today I am sharing this amazing Skillet Lasagna recipe that is one of mine and my husband's favorites. It is a very simple, one pan dinner and it tastes delicious!

Ingredients
1/2 pound ground turkey or beef
1 tsp ground Italian seasoning
2 tsp minced onions
1 tsp minced garlic
1- 24oz jar spaghetti sauce
2. 5 cups water
4 cups uncooked pasta
1 cup ricotta cheese
3 Tbsp chopped fresh basil
1 cup shredded mozzarella cheese
3 Tbsp grated Parmesan cheese

Directions
Cook ground turkey or beef until browned drain access liquid. 
Add Italian seasoning, garlic and minced onions to pan and cook for about 1 more minute.
Add water and spaghetti sauce to skillet and bring to a boil.
Stir in noodles and cover. 
Cook on medium heat, stirring occasionally, for about 12 minutes or until noodles are tender. 
Remove from heat.
Mix ricotta cheese and basil together and drop spoonfuls over the noodle mixture.
Sprinkle with mozzarella and Parmesan and cover for 5 minutes or until cheese is melted.

Then ENJOY!!
