Delicious and EASY Chocolate Cupcakes
I have spent some time trying to perfect a chocolate cupcake that I can say
is amazing and I finally feel I have done it! These are
perfectly moist, the texture is light and they literally melt in your mouth.
I am so excited that I have accomplished this so I am sharing the recipe with
all. I hope you enjoy them as much as I have.
Cupcake Ingredients:
2 cups sugar1 ¾ cups all-purpose flour
¾ cups cocoa powder (use a good brand! I like Ghirardelli)
1 ½ teaspoon baking powder
1 ½ teaspoon baking soda
1 teaspoon salt
2 eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract (use a good brand also!)
1 cup boiling water
Directions:
*Heat oven to 350 degrees. Line cupcake pans with paper liners. The recipe
makes about 30 cupcakes.*In an electric mixer stir together sugar, flour, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil and vanilla and mix on medium speed for 2 minutes. Stir in the boiling water scraping edges and bottom of bowl to make sure it is mixed well. The batter will appear thin.
*Pour into cupcake pans about 2/3 full.
*Bake for 20-23 minutes or until a toothpick comes out clean.
Icing Ingredients:
2 sticks butter (1 cup)¾ cups Cocoa powder
7-8 cups confectioners’ sugar
1/3 cups milk
1 ½ teaspoon pure vanilla extract
*In an electric mixer cream the butter until it is smooth and creamy, should take about 3 minutes. Turn the mixer to low and slowly add 7 cups confectioners’ sugar and the cocoa powder. Once combined add the milk and vanilla. Add the remaining cup of sugar until you reach the consistency that you want.
