Scalloped Potatoes Recipe

For Valentine'e Day this year I stuck to making a dinner at home since the whole family was fighting colds. I made a Turkey Meatloaf, these Scalloped Potatoes a salad and for dessert a Giant Heart Cookie. I wanted to share with you this delicious Scalloped Potato Recipe that I threw together:

Scalloped Potatoes

6 medium potatoes
3TBSP flour
1.5 cups milk
1 cup sour cream
3 TBSP chives chopped
1 tsp salt
1/2 tsp pepper
1+/- cups shredded cheese (I used the Mexican blend since I had that in the frige)

Heat oven to 350 degrees. 
Peel potatoes and cut in thin slices.
Whisk flour and milk together in a large bowl. 
Mix in sour cream, chives and salt and pepper.
Add potatoes and coat with mixtures.
Pour into a 13x9 greased pan and top with cheese.
Bake for 50-60 minutes or until the potatoes are soft.

Turkey Meatloaf Recipe

For Valentine's Day dinner I decided it would be fun to make a heart shaped meatloaf dish to tie into the days theme. I searched and searched for a perfect recipe using turkey and I was not fond of any. I decided to throw together my own recipe after discovering what the base of the meatloaf needed to be. Here is the recipe I had in the end:

Turkey Meatloaf

1.5 cups onions chopped
1/2 TBSP minced garlic
1 tsp olive oil
1/3 cup shredded carrots
1 tsp salt divided
1/2 tsp black pepper divided
1.5 tsp Worcestershire sauce
1/4 cup finely chopped fresh parsley
1/3 cup ketchup divided
1 cup fine bread crumbs
1/3 cup milk
1 large egg lightly beaten
1 large egg white lightly beaten
1.5 pounds ground turkey

Preheat oven to 400 degrees. 
In a skillet warm the oil and cook the onions and garlic until onions are soft, about 2 minutes. 
Add shredded carrots and cook another 2 minutes.
Add 1/4 tsp pepper, 1/2 tsp salt, Worcestershire sauce, parsley and 3 tablespoons Ketchup.
Pour vegetable mixture into a large bowl to cool.
In a small bowl stir together bread crumbs, milk and eggs (including the single egg white) then add to vegetables.
Add turkey, 1/2 tsp salt and 1/4 tsp pepper and mix well with your hands until all ingredients are incorporated.
Grease a pan well and add mixture. I used a heart shaped cake pan or you can use loaf pans, glass 13x9 pans and form them into a loaf shape.
Brush loaf with remaining ketchup.
Bake in oven for 50 minutes or until a thermometer inserted in the loaf reaches 170 degrees.

And for dessert a Giant Chocolate Chip Cookie made into a cookie sundae.

Strawberry Cupcakes

Today I am sharing with you my Strawberry Cupcake recipe that is out of this world! I wanted to make a strawberry flavor cupcake for a mini baby shower that we were going to. I decided to use my basic cupcake recipe that I always turn to and just switch it up to have an awesome strawberry flavor. So here it is:

Strawberry Cupcakes

2 1/5 cups all-purpose flour
1 Tablespoon baking powder
3/4 teaspoon salt
2 cups granulated sugar
1/2 cup vegetable oil
2 eggs
1 1/2 cups whole milk
1 teaspoon Vanilla
1/2 teaspoon Strawberry Extract 
1 1/5 cups (plus 3 TBSP for icing) pureed strawberries

Preheat oven to 325 degrees. 
Prep cupcake pans with liners.
Sift together flour, baking powder, salt and sugar. 
Add dry ingredients into a mixer bowl.
Add oil and mix on low speed, once incorporated add the eggs, milk, extracts and pureed strawberries.
Mix on low speed for about 15 seconds.
Scrape sides and mix on low speed for about a minute or until the batter is all mixed together. DO NOT OVER MIX.
Fill cupcake liners 3/4 full and bake in oven for 20-23 minutes or until a tooth pick comes out clean. For a moist cupcake you do not want to over bake them. Take them out before they turn golden brown and when you think they might be a little underdone. Cool cupcakes and ice with the following recipe.

8 ounces cream cheese at room temperature
1/2 cup salted butter at room temperature
1 pound confectioners sugar
1/2 teaspoon vanilla extract
1/4 teaspoon strawberry extract
3 tablespoons pureed strawberries
Pink food coloring if desired

In an electric mixer cream together butter and cream cheese for about 1 minute.
Turn the mixer to low speed and add sugar a little at a time.
Scrape sides and add extracts, mixed well.
Add pureed strawberries 1 TBSP at a time and mix well.
If the icing is too runny add a couple more tablespoons of confectioners sugar until you reach your desired consistency.
Mix on medium speed for 3-5 minutes.

Wilton Giant Cookie Recipe

Awhile back I purchased this Wilton Giant Heart Cookie Pan from a garage sale and decided it would be perfect for our dessert on Valentine's Day this year because it would be pretty easy. Wilton has other shapes of pans as well for different occasions. The recipe for the cookie itself from Wilton was very good so I had to share:

Chocolate Chip Cookie for Giant Cookie Recipe



Cookie serves 8- 10.


step 1

Preheat oven to 350°F. Spray pan with vegetable pan spray. In a large mixing bowl, cream butter with sugars. Add egg and vanilla and mix well. Stir in flour, baking soda and salt; mix well. Stir in chocolate chips. Spread dough into prepared pan with spatula. Bake 15-20 minutes or until light golden brown. Cool on rack for 5 minutes. Remove from pan. Cool before cutting. Decorate.

It said to use a spatula to spread around but I found it really hard to spread because it kept sticking so I just used my hands. 

For our dessert I topped it off with ice cream, whipped cream and chocolate syrup.. YUM!

Valentine's Day Dinner

Although Valentine's Day isn't really much of a holiday I still had planned some fun activities and to make some theme appropriate food throughout the day while celebrating with the kids. But then a couple days before Valentine's Day the kids were hit with a pretty nasty cold so our Valentine's Day was very low key and consisted of preparing for dinner and enjoying a good meal in the evening.

Take a look at what I whipped up:

Our table setting... I was way too tired to do much with it, kinda plain :(

Our awesome salad.. Yes those are heart shaped cucumbers.. 

I used my heart shaped fondant cutters to cut the hearts out then Hailey ate all the scraps :)

At the store the kids insisted on the lizard bread for dinner, again was too tired to make my heart shaped bread as planned.  

I made a heart shaped turkey meatloaf and scalloped potatoes as well

Then for dessert I made a giant heart cookie 

I added some ice cream, whipped cream and chocolate syrup to top it off! It was all so delicious and enjoyed by all!! Some recipes from this meal to come over the next few weeks.

Valentine's Q-tip Painting

Today I am sharing with you my daughters wood heart that she painted for her Daddy using Q-tips.

I had this wood heart sitting around that we had purchased from Michael's a while back. 
I painted it a solid teal then let her have at it once it was dry.

I gave her some Q-tips to decorate with and she loved it. 
She didn't really do so much of the dotting with them the entire time, she is a toddler with her own imagination so she just went crazy but in the end I love it because it shows her true self in the project. 

She had to decorate the paper too she said :)

She was so happy once it was all done and said she was so happy to give it to her Daddy.

Once it was try I also gave it a spray of a satin clear finish to seal it and give it some shine.

Fingerprint Valentine's Frame

My daughter picked this frame out when we were at Michael's Crafts one day and I decided with Valentine's  Day coming what perfect time to do something with it. I gave her a paintbrush and she went for using her fingers, probably because we had just practiced her Fingerprint Hearts right before this. 

Before she began her work on the frame I painted it a solid red.

Then I gave her a plate with pink and white paint and she went to town. 

Once she was done I sprayed a clear satin finish on it to give it some protection and shine. 

sssshhh don't tell Grandma and Grandpa but she said she was making it for them for Valentine's Day :)
