Parmesan Chicken with Cream Sauce
Today I am sharing with you another delicious chicken recipe. I found a recipe trying to attempt this idea a couple years ago but many of the ingredients were off and it wasn't very good at all. So here is my recipe I have created in hopes of making a delicious Parmesan Chicken and believe me it is a must try for your next meal!
Parmesan Chicken with Cream Sauce
Ingredients:
2 boneless skinless chicken breasts
8-10 Ritz crackers, finely crushed (could also use club crackers etc)
3 TBSP Grated Parmesan Cheese
1.5 TBSP vegetable oil
1/3 cup Chive and Onion Cream Cheese Spread
1/2 cup water
1 egg
Salt and Pepper to taste
Directions:
Beat egg into a medium size bowl.
Combine crushed crackers and Parmesan cheese on a plate.
Rinse chicken breasts and pat completely dry with a paper towel.
Dip chicken into beaten egg on both sides then dip chicken into cracker mixture, turning to coat both sides, sprinkle with salt and pepper.
Heat vegetable oil in a skillet on medium heat.
Add chicken and cook from 6-9 minutes per side, depending on size of chicken.
Remove chicken from pan and place on a serving dish.
Leave stove on and add the water to the pan (leave any oil and drippings from cooking chicken in the pan).
Add the cream cheese spread to the pan and stir constantly until it is melted.
Simmer about 3-4 minutes or until the sauce begins to thicken.
Spread over the top of the chicken.
Serve with rice and vegetable and ENJOY!

Nichole
