Lasagna Soup Recipe
I am not sure about where you live but here in Northern California the days are much cooler and as the winter draws near I find myself making more soup recipes which are my favorite during the very cold winter days. So in honor of these chilly days I decided to share with you a delicious Lasagna Soup recipe that I made just the other night and it was a huge hit with my family.
Lasagna Soup
Ingredients
3 tsp olive oil
1/2 lb ground turkey
1/2 onion chopped
1/2 green bell pepper chopped
1/2 tsp garlic, minced
1 tsp Italian seasoning
1/4 black pepper
32oz Chicken broth
2-8 oz tomato sauce cans
1-14.5 oz can petite diced tomatoes
1/2 tsp salt
1/8 tsp crushed red peppers
2 cups of noodles- I recommend something small
1/2 cup fresh basil, chopped
3 tbsp grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Directions
Heat oil in a large sauce pan
Add the ground turkey, onion, bell pepper, garlic, Italian seasoning and pepper.
Cook over medium heat stirring occasionally until the meat is browned
Add the broth, tomato sauce, diced tomatoes, salt and red peppers and bring to a boil.
Reduce heat and simmer for about 20 minutes.
Add the noodles and cook uncovered until the noodles are tender, stirring occasionally.
Remove from heat, stir in the basil and cheeses and ENJOY!
